    November 2010 - Food

    With the weather getting worse and worse and the snow starting to fly, for those of us that don't head south or live in the south we tend to put our camera's to rest for a bit.

    This month it's a double challenge, take a snapshot of some of your favorite foods and maybe even post a recipe of your favorite creation. Break out the phone camera at the restaurant, try a new creation and take it's photo, anything goes!

    Figure I'd start the thread off with something I made a while back and everyone liked it and thinking of making it again tonight....



    Ingredients
    Shrimp
    - 28 large shrimp
    - 1/3 cup cornstarch
    - 3/4 tsp. salt
    - 1/2 tsp. ground red pepper
    - 3 large egg whites
    - 1 1/2 cups flaked sweetened coconut
    - cooking spray
    Salsa
    - 1 cup finely chopped fresh pineapple
    - 1/3 cup finely chopped red onion
    - 1/4 cup finely chopped fresh cilantro
    - 1/4 cup pineapple preserves
    - 1 1/2 tbsp. fresh lime juice
    - 1 tbsp. finely chopped seeded jalapeno pepper
    - 1/4 tsp. black pepper

    Constructions
    - Preheat oven to 400 F.
    - To prepare shrimp, peel and devein shrimp, leaving tails intact. Rinse shrimp in cold water; drain on paper towels until dry.
    - Combine cornstarch, salt and red pepper in a shallow dish; stir with a whisk. Place egg whites in a medium bowl; beat with a mixer at medium-high speed until frothy (about 2 minutes). Place coconut in a shallow dish.
    - Working with 1 shrimp at a time, dredge in cornstarch mixture. Dip in egg white, dredge in coconut, pressing gently with fingers. Place shrimp on a baking sheet coated with cooking spray. Repeat procedure with remaining shrimp. Lightly coat shrimp with cooking spray.
    - Bake at 400 F. for 20 minutes or until shrimp are done, turning after 10 minutes.
    - To prepare salsa, combine chopped pineapple and remaining ingredients in a medium bowl, stir to combine.

    Randy, I have been meaning to, but have not had the camera out since getting back from my trip and our dog passing away. I have a few ideas in my head and hope to do something soon. I hope that some of the others are looking at this challenge.

    Homemade Chocolates



    Playing around with chocolates and moulds this weekend and here are the results.

    Belgian chocolate on the outside, with an inside of coconut, macadamia nuts, and sweet milk and then drizzled with white chocolate.
    Here is the filling I found somewhere on the Internets... :)

    Coconut Cream Filling
    1 cup toasted chopped macadamia nuts
    1 cup sweetened condensed milk
    1 tsp. almond extract
    1 bag sweetened shredded coconut

    The recipe calls for rolling them into balls and cooling them, I used it as the insides instead :)

    Sure tease us with the chocolates, and to make matters worse you only got that last one in barely in focus. Randy, you need to get that aperture way down to get better results and I think you need to shoot this one again and hope that you still have the goods? Now that would be to much to ask for....

    Ya sorry to say goods are all gone and I was trying my best while holding the kids back from eating them :) Next weekend, planning on trying a few different kinds!
